I made carrot cupcakes with cream cheese frosting for Easter gifts this year. I used THIS recipe. I didn't put the walnuts in though because certain little people sometimes spit things out if there are too many textural surprises.... unless of course she's eating peanut butter cookies - then they can be as chunky and filled with chocolate chips, coconut and oatmeal as can be imagined and she'd still eat them!
The recipe is actually for a cake but I used it successfully to make cupcakes. I backed them for 25-30 minutes at 350 degrees. I hope you have the same success. Keep them refrigerated and they are even yummier!
