This family Day weekend is going swell! We had another lovely day with Granny, Grandpa, cousin "L", Aunt and Uncle "M" and Cousin's "E" and "B". I can't believe the first week of my cousin's visit has already come and gone. The little Diva and I are really looking forward to going shopping with her and Granny next week.
Anywho, I have a million and one things to get done tonight so let me leave you with a quick and easy vegetable dish recipe.
Grab a Pyrex dish and add a little olive oil. Make sure it is spread along the bottom. Into this dish add an assortment of chopped (fresh or frozen) vegetables. Butternut is a MUST! A great combination also includes onion, mushrooms, brussel sprouts, cauliflower, broccoli, peppers and carrots. Sprinkle a veggie spice of your choice over the top (one with rosemary and olive is delicious!), cover with foil and bake in a 350 degree oven for 30 minutes or until the veggies are cooked to your liking.
