I finally got around to making the rice pudding today. I doubled the recipe (12 eggs was quite the sight) and made a few changes. I probably used 2 or 3 extra cups of rice but the recipe is pretty flexible as far as quantities go.
Ingredients:
3 Cups of Rice
2 Cups of Milk
1 tablespoon butter (15ml)
1/8 tsp Nutmeg
1 Cup of Sugar
1 tablespoon syrup (15ml)
6 eggs
2 tsp baking powder (10ml)
Cinnamon for top
Place milk, rice, butter,nutmeg and syrup in a pot. Warm until butter is completely melted. |
Beat sugar and eggs lightly together. |
Mix everything together. Pour into greased Pyrex dish. Sprinkle with cinnamon. |
Bake in 320 degree oven for 60 minutes.ption |
