I didn't end up making my banana bread today and instead made a huge pot of chicken, vegetable soup.
Here's what you do ->
Into a huge pot place the following:
4 large red potatoes washed and cubed
1 large bunch of broccoli
half a head of cauliflower
2 onions
1 large red pepper
4 carrots peeled and chopped
2 cups assorted lentils
2 chicken stock cubes
1 vegetable stock cubes
Add enough water to almost fill the pot and cook on low heat / low boil for 4 or so hours. Stir every now and then. Liquidize and enjoy!
