Day 188 - Lovely Day!

I spent a lovely morning with my mommy and sis-in-law getting a pedicure and manicure. It was a pretty belated Birthday celebration for mommers. I enjoyed the company and the pampering immensely. It was also fun to chat and just get to hang out with two of the special ladies in my life.

Then it was time to head home where my hubby grilled up some awesome burgers and we all got stuffed! Way too much food later we all squeezed in some birthday cake. I boiled up some caramel for the cake and it was amazing - it had been WAY too long since I'd done that!

I'm exhausted so let me end of here - I have tonnes of cleaning to do tomorrow. Night night to all and a BIG HAPPY CANADA DAY for Sunday!!!

Day 187 - So tired!

We had a really busy day and busy/late evening. The little Diva didn't fall asleep in the car on the way back and instead cried for her bed. She is currently crying in bed, completely over tired with no actual bedtime in sight. UGH.  I also discovered that one of her bedtime toys looks like a demon in the new blue night light. We turn it off once she falls asleep - the light not the demon toy.

 The Little Diva was telling me "OWL SCARY - OWL SCARY - SCARY".... I finally looked at the doll and had to keep from saying a not so pg word and screaming myself. It's eyes were glowing a hideous white blue and looking none too friendly. I quickly took the offending baby out of her bed and assured her she was safe. I'm hoping she tires herself out soon because this is just crazy. I wish there was some magic formula to teach kids to put themselves to sleep... anyone out there have any tips? I feel like bed time traumatizes the entire household.

Anyway let me see if I can convince her to go to sleep. Here's hoping tomorrow is an AWESOME day!

Day 186 - Fun in the Sun :)

I had a BLAST this morning with my little Diva, my sis-in-law, her adorable kiddies and one of their friends. We spent the morning at a farm and had way too much fun. The Little Diva LOVED the bunnies and the chickens and was SO good on the wagon ride. She sat quietly and took EVERYTHING in. She even sat still as we stopped and listened to the farmer telling us more about the farm. She loved the ducks and the pond with the "splash" aka fountain.

We spent some more time investigating the farm and saw some baby chickens which the Diva dubbed "CUTE!!!". Then we found a spot to have a picnic. The Little Diva was pretty darn impressed with the YUMMY Maple cookies we found at the gift store and was happy to sit with her cousins and munch on one. So was I!

Aunty M got a lot of attention from the Little Diva today. She made sure that Aunty M was always close at had taking part in the action. Divabum had a lovely nap on the way home and was good as gold when we ran some errands later. She was very happy that mommy stopped by the pet store so that she could say Hi to the fishies, piggies and kitties!

Day 185 - time to regroup!

Whew so it's fair to say that if you realise you are out of bread, milk and cheese all in the space of an evening to the detriment of your morning cereal and coffee that it is time to take a step back and REGROUP! Ugh - yes so the house is cleaner but I seem to have neglected purchasing several key grocery ingredients. The little Diva and I set out this morning to remedy the situation.

We first stopped at Costco where the Diva had a blast trying different cereals and crackers. She was pretty amused by the store and we actually bought one of the cereals she enjoyed. It is a lovely crunch maple corn cereal with all different shapes and sizes to it - it's called Natures Path Sunrise Crunch Maple. I have to admit this mommy thought it was pretty damn yummers too. AND it's Gluten free for all you Celiacs out there!

Anywho so we grabbed milk, bread, cereal and magic eraser's at Costco and we just need to go out later this afternoon to grab some cheese! We came home so the little goober bum could have her nap. It sounds like she is waking up now though so I better skedaddle. Until tomorrow - stay happy!

Day 184 - Play Date!

The little Diva and I had a blast this morning with her little friend "E" and his mommy. The kiddies had fun playing inside and also outside in the sandbox and the mommy's had a great time catching up too. The two of them got so sandy we actually had to hose them off before we could let them back inside for a snack!

I have so much fun watching my baby play with her friends. She's getting more interested in actually playing "with" her friends rather than just around them. "E's" mommy and I couldn't stop laughing when we gave the kiddies some puffs. They were both shoveling the puffs into their mouths as fast as they could to avoid the other getting more. We eventually had to give them each their own bowl and even that caused an issue because the Little Diva decided to steal E's bowl.... we were finally able to convince him to keep hers and peace was restored. They shared a bowl of baby carrots as well and each had a drinking yogurt. I think the Diva actually had two!

All in all it was an awesome morning and even though my little punk didn't go down for her nap until 2pm it was a good day. I think I will have to take her out to run around tomorrow to tire her out so that bed time will be less distressing for all involved! I'm also itching to grab some finger paints! Who knows what insanity tomorrow will rustle up :D

Day 183 - Busy week ahead :D YAY!

I am looking forward to the rest of this week. I plan to keep the little Diva and I BUSY, busy, BUSY. Tomorrow we have a play day with one of her little friends and I'm sure it will be a blast! I'm not sure what the plan for Wednesday is yet but Thursday finds us at a petting zoo with my sis-in-law and her kiddies. I am super excited for this one as the little Diva loves animals. I can't wait for her to see them :D And spending the day with family is always a blast!

Hmm today had quite a late start - the Diva slept in till 8:30am. She got to bed late again tonight so I'm guessing the sleepy head will sleep in tomorrow too. I'm hoping we have a good day and after her nap I think we will try the potty training thing with a little more gusto again. She seems to be understanding more and more and I hope she's ready this time.

Her little toy laptop asks "Are you home" when it's been inactive for a while and when it did that today she piped up with her cute little voice, "Yes I's home". :D This kid makes me heart smile even when she's dragging her feet and tantrum-ing up a storm. I love her to the moon and back a bazillion times a bazillion times infinity!

Day 182 - Pancakes!

We had a lovely relaxed day today. The little Diva had a swimming lesson this morning and had a blast with Daddy in the pool and then we decided to go out for breakfast. We went to Sunset Grill  where the  Diva had fun watching Thomas on my phone while we waited for our food. The restaurant smelled like coffee and eggs and bacon and all manner of yummy things. It took my back to my childhood and breakfast at Granny and Grandpa's on Sunday after church. It's amazing how vividly some smells can bring back happy memories (I'm sure this also works with negative memories, but luckily I haven't experienced that!).

The little Diva ate some pancakes and Mommy and Daddy ate WAY too much eggs, hash-browns, toast and pancakes. Yipes we were so full we only needed supper! After all the awesome food it was time to head home for a nap for the little goober.

We have a pretty busy week ahead of us so I'm going to try get an early night tonight! I hope everyone had a wonderful weekend and are raring to go for the week ahead.

Day 181 - Gotta plant them plants!

We didn't really do too much today. We were supposed to go to a community BBQ but the little Diva's nap coincided with lunch time and we ended up getting Mac Donald's instead. Gotta say I enjoyed my Angus burger :) We had a lovely long afternoon walk and after the Diva's late nap she only got to sleep around 10pm. I really need to try figure out a way to bring her bed time closer to the 7:30pm it used to be.

We don't really have plans for tomorrow other than the little Diva's swimming lesson so who knows what the day will bring. The possibilities are endless!

Day 179 - Squeak Mystery solved!

The little Diva's stroller has been making some pretty darn terrifying sounds as of late. There have been squeaking sounds, some weird mechanical groaning and due to it being harder to push than normal some choice words muttered under this mommy's breath.

Anyway this had been going on for a while and we had come to the conclusion that we were probably going to need to buy a new stroller if WD40 didn't fix it. You're probably wondering what the WD40 did... well considering neither of us remembered to try it I have no idea what it would have done!!

Anyway this brings us to yesterday. The little Diva and I went for a stroll at the mall and I was a little apalled at how grotty her stroller was. The foot rest was covered in something sticky and dusty looking. I realised it must be the apple Juice the Little Diva had squirted all over herself a long couple of days earlier. Ugh - GROSS! I decided that as soon as she was asleep I was going to have to take the stroller outside and give it a good scrub down.

The Diva fell asleep on the ride back home and after I'd popped her into her bed I went back outside. I parked the stroller on the lawn and simply hosed it down! I then grabbed some baby shampoo and worked it into a nice lather all over the stroller. Another couple of hose down's and you wouldn't have thought it was the same stroller.

I left it out in sun to dry and thanks to the heat wave we are currently experiencing it was dry by the time we went for our after dinner walk. We had been walking for a good long while before the hubby said, "hey it's not squeaking any more"... I go "oh yeah!! Is it easier to push too?"

Turns out it is - I guess there was apple juice gumming up the wheel - Yuck. But really who would have thought that a good old hose down could cure a squeak?

Day 177 & 178 - HOT HOT HOT!

Whew so I do apologize for missing yesterday's update. Our Air-conditioning unit decided to give up on us. We had a guy come out to look at the unit around 9pm and he was able to fix it by replacing a part. Then the freaking thermostat decided to fall apart when we put it back so the hubby had to run to home depot for another one. He got it back only to discover that the wall plate was different so he had to take that off too and install the new one from scratch. He had to figure out which wires went were and got it done. The diva and I were hiding upstairs melting - it was close to 10:30pm and she was still up - poor girl was just in her diaper and still melting. Hubby got the new unit in only to discover that the AC was still not turning on and now lights were flickering and not working in the basement.

We called the guys back and were told the message would be passed to the service technician. We waited... we were getting despondent... I called my mommers and asked if we could come crash there in 30 minutes if the guy didn't show up. The parentals were only too happy for us to let ourselves in and use the spare room. Mom said she would have the mattress ready on the floor for the little Diva too.

We waited another sweaty 15 minutes and decided to call it quits. By this point the Diva was asleep in the middle of our bed being slightly cooled by the ceiling fan and another fan on the tv stand. We quickly packed a few things and got the Diva into her pj's. She threw quite the fit when we squeezed her into the car but she was luckily soon fast asleep.

We got to the parentals and let ourselves in. As I suspected might happen we were greeted by a sleepy but happy to see us mommers! She made sure we were all settled and then everyone got to bed.

At 8am we got a call from the technician saying he's at our house so we quickly packed up after a cup of coffee and set off back home. The little Diva was really happy to wake up to Granny an Grandpa, even if she looked super confused at 6am trying to figure out where she was! Chasing Misty around was also definitely a high point!

We got home and thankfully by the time the little diva and I got back from the play center the house was staring to cool down. It looks like the guy merely tripped a fuse last night. He did however have to rewire part of the fuse panel though so who knows eh?

The Diva and I went for a mall walk while we waited for the house to cool (took a couple of hours_ and she ate a butterfly cooking while mom had an iced tea. It was all good fun!

I would keep typing but my eyes are actually closing on me. Night night everyone :)

Day 176 - Cheeky Diva!

The little Diva and I had a pretty low-key day today. Mamma was POOPED after the crazy busy weekend so I decided we would just run a quick errand this morning and then take it easy after divabum's nap. We went out to the grocery store and on the way back to the car the little Diva told me, "fishies, birds, pigs".... I asked "Do you want to go see the fishies and guinea pigs?". I got a huge "YES" and so we did a quick stop at the pet store where I was informed that the fishies were hungry for cookies! Of course they were - what else would pet store fish eat? :D

We then went home for nap time and had a pretty chilled afternoon. I gave the little goober a bath before Daddy got home and then we quickly went over to Dadoos and Mandada's for supper. While we were there Daddy grabbed the little Diva and tickled and tickled her. She giggled and started to say "done, done, done" which quickly turned to hysterical laughing and "sowwieee, sowwieee"... we are not sure what she was sorry about but everyone was giggling and Daddy put the little Diva down. She took a few steps back and said, "NO SOWWIEEE"..... lol as can be imagined, everyone was in hysterics! She is one cheeky little Diva!

Today is also my Mommy's or as she's known to the little Diva: Grano's birthday! The Little Diva and I are looking forward to spending Friday with her and think that a trip to a coffee shop for some tea and cake will most certainly be in order!! We are super happy that Grano had an awesome birthday day and we are all for spreading out the celebrating :D Love you mommers!

Day 175 - Tiredness continues!

We had another amazing, fun, family filled day! We spent this morning with my side of the family celebrating all the dads and then this afternoon with the hubby's side of the family doing the same. Both parties were a great success. Everyone pulled out all of the stops. To say we are "full" is the understatement of the century. We are STUFFED! And there are divine leftovers in the fridge waiting for a moment when we're not quite so full.... Mmmmm :)

Day 174 - House full of Tired Happy people :)

We had an amazing day - An A-FREAKING-MAZING day! Our little Baby is 2 and she celebrated in style today. Her friends and family had a blast and on behalf of us all I'd like to say for the record that we are all EXHAUSTED!!!! haha There was pizza, chips, dip, cake, cupcakes, juice, and a ridiculous amount of Thomas decorations! It was perfect. A perfect party for our perfect little baby.

Perfect but still exhausting. I was up early baking cupcakes and icing them...So please forgive me as I sheepishly sneak off to bed!

Day 173 - :D

Happy Birthday to the most amazing, strong, gorgeous, smart, wonderful, and perfectly stubborn little girl! Mommy and Daddy love you more and more each day - you brighten our lives in ways we couldn't have imagined and you bring ridiculous amounts of love and happiness too!

I cannot believe that our little Diva is already 2 years old - where has the time gone? I spent a wonderful chunk of today icing her cake - I finished it late this evening and can't wait for her to see it in the morning!

I have a few things I need to do tomorrow morning before the party so I really do need to get my sleepy ass to bed - Night night everyone

Day 172 - Green Tea Lattes....

Dear Tim Hortons,

Green Tea Lattes do NOT have coffee in them. No, not even that coffee sprinkle stuff you put on top of the other coffee lattes. NO coffee whatsoever!!

Grossed out "would-be" tea drinker turned drink "pourer-down-the-sinker"



Sigh.... Imagine if you will the flavour of delicious coffee... now imagine the flavour of less tasty but "tolerated because it is healthy" green tea. Now imagine them together in the same cup. Yup you got it - BLEARGH. It is so not a pleasant mix. Sure if you catch the screw up early and remove the bag right away you could still drink the coffee latte and it wouldn't be so bad but let that tea bag simmer and man are you in for a taste-bud assault. This is the 3rd time I've tastes this awful mix up and I really think next time I will take a sip before driving away from the window!

Here's hoping that the next order goes better, or not, it makes for something to type about - lol

Day 171 - Cats.... no comment!

Sigh... ok I said no comments about the cats so I will stick to that.

Hmm... so what more is there to type. The little Diva and I had some fun painting at the center this morning and then had to go grab some veggies at the grocery store. You will be proud to read that I bought Ontario grown tomatoes over imported ones - yay for going green, or reducing my carbon footprint or whatever the heck the positive is here - other than the fact my veggies had a way shorter trip to my plate :)

I'm really reaching here for stuff to type so hang in there - hopefully tomorrow will be more entertaining in my corner of the world! Happy Thursday everyone :)

Day 170 - I hate my cat so much right now...

UGH! That is pretty much how I can sum up the last hour. It started with a lovely chat with the hubby while unpacking the dishwasher. I then proceeded to set a terrible chain of events in motion by uttering the following sentence:

"I probably shouldn't say this out loud because it will probably jinx things, but the cats haven't barfed anywhere or pooped outside the litter box since I started dosing them with Rescue Remedy!"

I was happy and upbeat and all kinds of optimistic.

Stupid, stupid gullible me.

I came upstairs after my workout and was just about to hop in the shower when all hell broke out downstairs. It sounded like the cats were killing each other. There was hissing and running and thudding and yowling. I am thankful that this ruckus didn't wake the little Diva because getting her to bed elicited many of the same sounds and took a LOT longer (Ok there was no thudding but I may have hissed and the Diva sure as heck yowled).

Anyway, I get down there and JubJub was nowhere to be seen. Mr. Kitty was sitting under the table acting as if nothing had happened and JubJub slowly skulked out from behind a chair. He then proceeded to make even more hideous noises that signaled a hair ball was clawing it's way up and out of his esophagus.

I used my foot to gently coax him off the carpet and onto the hardwood so that I would have an easier time cleaning up the disgusting crap that was about to appear. I had also brushed the cats this afternoon so I was NOT impressed that there was still enough hair in this cat to form a hairball. Anyway he was all crouched and ready to barf and giving me some serious cut-eye when he seemed to reconsider the barfing and decided to head downstairs.

I followed a few minutes later to check on laundry and found him squatting in his bed. AAAARGH I screeched - WHAT THE HELL ARE YOU DOING?!! He didn't reply but shot me another dirty look. At this point I grabbed him and ran to the litter box. In the process I stepped on a nugget (UGH yes you can shudder I did) before shoving him in the litter box.

I decided to give up and hobbled upstairs sideways on one of my feet to wipe it with several (ok more than 5) wet wipes. I continued to hobble my contaminated ass upstairs and got in the shower. The universe is laughing her ass off at me, but I can assure you that I have the CLEANEST feet you have ever seen. I got to some SERIOUS scrubbing after that whole debacle.

Tomorrow I will be disinfecting the tub.

Day 169 - You're welcome little old lady laughing your ass off...

I was the object of hysterical laughter today and yes it was totally and utterly deserved. I was in the post office at a local Shopper's with the Little Diva to pick up some stamps. We had just been through the Tim Horton's drive through - my tea was waiting in the car and the little Diva was chomping down her two chocolate timbits. The stroller was close to the counter and before I knew it the little Diva had wiped her remaining timbit all along the counter telling me very seriously that it was a "table".

YEP it's a table I said a little off pitch as I grabbed the now hideously contaminated timbit from her sticky fingers and threw it into the bottom of the stroller. It was at this point that I become aware of the little old lady behind me - she is very obviously amused by the situation. I smile at her ans shrug. I calmly explain to the little goober that yes "mommy promises we will go get you a new timbit"... she asked me, "Home Timbit?"... "Yes hun we will be done super quick and then we will go get you another timbit to eat at home".

She seemed happy with this explanation and relaxed. The next thing I know she's rubbed her hands all along the counter and is licking the sticky Timbit residue off of them. I resisted the urge to scream hysterically and simply said, with my voice perhaps a little strained, "Ugh Don't LICK your fingers!!" My mind tried in vain not to imagine the bazillion kids who had probably rubbed their sticky, germy fingers along the same counter - I hoped that by some miracle this counter actually gets wiped at regular intervals!

The lady behind me is laughing hysterically by this point and I can't bring myself to look at her. I pay for my stamps and leave. Yes I know the situation was pretty funny - and if I'm being honest I would probably have laughed even louder if I saw it happen to someone else. I was probably better off letting her eat the timbit - you'd think I'd have the smarts enough to know to move the stroller further from the counter after throwing out timbit. Anyway I'm sure her immune system won't mind the boost!

Being a germaphobe is a real pain in the ass.... I see germs EVERYWHERE - if you sneezed into your hand and then opened a door today - I probably saw you. AND if I saw you I shuddered inside and my internal voice said, "UrgghhhhHHhg GROSSS"

On the way home I went through the Timmies drive though and ordered 2 Timbits. Yup... that is my ENTIRE order.... a lovely whopping 43 cents.

Day 168 - Sleep

Just feeling the family love today so I thought I'd share a quote. The little Diva is still a handful to get to sleep at night. I really wish I knew some magic trick to convince her that hopping in bed and going to sleep didn't have to be a huge theatrical production with crying and screaming thrown in for good measure. At least she seems to be more keen on eating these days so I'm cautiously optimistic that we're getting somewhere in that department. Now if only she'd come to the conclusion that bedtime is not a terribly TRAUMATIC experience. I mean is sort of is right now at least for us the parents....

To all the mommies, daddies, grandparents, aunties, uncles and guardians with little ones not sleeping tonight - Good luck - hang in there, they keep telling me it gets better eventually :) They get so big so fast that it really is hard not to savor the hugs when they ask for them simply as a distraction to get back out of bed! Just remember that sleep is good for everyone!

Day 167 - Sleep Deprivation 101

Tip number one when it comes to sleep deprivation is simply to embrace the insanity. Once you have a crappy night of sleep there's really not much you can do about it. Yep you could nap if and when yer little one does but... there are always other things that need tending to - like laundry! So you do it and hope that the next night will go better!

The little Diva is fast asleep and I'm hoping she has a good night. I'm starting to wonder if she has more molars breaking through.... Anyway I think I'm heading off to bed here. Sweet dreams everyone!

Day 166 - The quest for a 5c stamp!

Man so I was all set to walk to the mailbox with the little Diva to send of some cards to South Africa when I thought to myself, "gee self, it's been a while since you mailed stuff internationally are you sure these $1.75 stamps are still sufficient?" I quickly whipped out my iPhone and did a little check with the Canada Post App (Yep I have that hehe) and sure as heck the cost is now $1.80.

Sigh.

So the little Diva and I extended our walk to the nearest Shoppers. It was toasty hot - as we walked the little Diva munched on puffs and pointed out the trees, cars, ducks and flowers. It was a lovely walk. I was a little melty by the time we got there but definitely enjoyed the warm weather. Sadly I discovered that Shoppers doesn't sell the 5c stamps I needed to round up my old stamps so I will have to head over to one with a post office tomorrow. Which is just fine too as I have a couple of chocolate bars to mail to my little sister too :)

Day 165 - Service Canada Office!

The little Diva and I had to wait in line to renew her health card and my drivers license this morning. We stopped to grab coffee and timbits on the way because we were quite late considering my plan was to get there when they opened. We got there probably an hour or so after and there were 19 people in the lineup ahead of us. My heart sank - I was convinced we would be there for HOURS. I was VERY happily proven wrong :) - The employees at this office are SUPER efficient and SUPER fast. I will refrain from telling you where it is because A) I don't want you to know where I live and B) If I tell everyone where it is it will be PACKED and slow the next time I have to renew something!

The little Diva and I are planning to visit Granny tomorrow if she's feeling better - we don't want to be sick for the Diva's party week! Fingers crossed she's feeling better cause we're looking forward to seeing her.

Anywho with that being said I need to get to sleep because I have a bunch of things I need to do in the morning before I can head off to Grano's.

Day 164 - Butterfly release!

Haha so the little Diva and I went to the play group this morning to join in the releasing of the butterflies! She was so busy playing with her little friends that she completely missed them. Oh well - the running and playing tired her out and she had a lovely long nap so there was really nothing negative about missing the butterflies! I did see some of them escape their confinement and they kind of fluttered to the ground and stayed there - it seemed a little sad to be honest. Poor bugs - I hope some of them fared better!

I have to go wait in line tomorrow to renew my drivers license and I am so, so, so not in the mood. I really hope that the line is short and the little Diva is happy to sit still for however long is required. Ugh - wish me luck!

On that note I do have to scoot - have some other stuff I need to get done. Sweet dreams till tomorrow everyone :)

Day 163 - Yawn again

I am so tired I'm just sitting here thinking about things to write and not really coming up with anything. The Little Diva and I went to a play group this morning and she got to paint again! She loved it - I can't believe how fast she is growing up. We spent some time playing outside on the grass with all of the other kiddies, and then it was off to the grocery store and back home for nap time. Her Birthday is coming up fast and I finally found a cake pan - yay! Now just to pick up the icing colours and we are set.

I decided to cut out gluten for a couple of weeks to see if it helps with my allergies - but I already regret it. All I want is a big ol' gluten filled cookie. Haha wish me luck with tomorrow - here's hoping I can stick to the plan! Right now I'm feeling all kinds of "detoxy" - maybe I'll go grab a few more cherries!

DAy 162 - Boots with Summer dresses?

Yeah ok I really don't have much to type as is evident by my post title. I was just pondering whether or not it is fashionably acceptable to wear boots with summer dresses. I saw a cute photo and though - heck I could totally pull that off - who knows; I may yet on my great adventure to rediscover my style sense.

Ugh I can't believe it is midnight already - I have been sitting here wasting time unable to think of something to type. I think I'm going to end of here and get some sleep. Here's hoping Tuesday is more productive in the blogging department :)

Day 161 - Countdown to the Diva's Birthday Party!

The Little Diva's birthday is quickly sneaking up on us. I can't believe our little baby is almost two. I had a moment today where I was overcome with emotion - I feel such a profound love for our little girl and such a profound thankfulness that God saw fit to put us where we needed to be to ensure that our little preemie miracle got the treatment she needed so that she could be ok. Sometimes I feel like I could honestly burst when I think of all the joy this little girl has brought into our lives. Yes we have moments where her tantrums or fussiness with food want to make us pull our hair out - but we wouldn't trade it for ANYTHING in the whole wide world.

I feel blessed tonight and though I'd share that - I hope that everyone reading this can take a moment to reflect on something good in their lives. Things may not always go the way you'd like them to but I honestly believe that things work out the way they are supposed to; one way or another when they are ready. I read a quote recently that simply said, "Everything will be alright in the end. If it's not alright, it's not the end." So hang in there - Things will get better if they are not already good :)

Day 160 - Time to get thee to bed!

We had a lovely day at Grano and Grandpa's today - visiting with Aunty S and Uncle P. The little Diva also had a blast playing with her cousins. I'm looking forward to a quieter day tomorrow and would like to take it easy after we take the little Diva swimming in the morning. I'm hoping to get some cleaning done but I'm in no mood to stress myself out over it. As long as we get the laundry done and the dishwasher unpacked and packed I think I'll be able to relax a little. I have leftover quiche in the fridge along with some yummy chicken breast from lunch today that will make GREAT chicken salad sandwiches and then there are some beans in tomato sauce too. I'm pretty confident we can whip up three meals tomorrow with those and keep cooking/baking stress to a minimum too!

I hope that everyone has an amazing Sunday and gets to relax too. I'm going to end off here and get some unwinding done before I try and call it a night. :)

Day 159 - ORZO - or, you know, that pasta that looks like maggots!

The little Diva and I spent a LOT of time looking out of windows today. It was POURING with rain and as the Little Diva so cutely put it, it was "water, wet" out there! We had a lovely visit with my mom and dad and aunt and uncle  this morning - the Little Diva had a blast and wasn't too difficult to get to sleep for her nap after all the morning's excitement. When she woke up we had lunch and then quickly braved the icky weather to grab a few ingredients to make a salad for tomorrow's get together.

I made a Mediterranean Orzo Salad and despite the fact that the pasta looks like maggots - ESPECIALLY when you spill some and they stick to the front of your oven and actually look like they're crawling up it - the salad tastes yummers. I can't wait to see what the flavour tastes like tomorrow when it's had some time to mingle. I found the recipe on the Canadian Living website.

Here is the recipe:

Ingredients

2 cups Orzo pasta
1/4 cup Lemon juice
1/4 cup extra-virgin olive oil
1 tsp liquid honey
1/2 tsp salt
1/2 tsp pepper
1 pinch dried oregano
1 diced red pepper
1 cup diced cucumber

3/4 cup crumbed cow's milk feta

1/3 cup chopped pitted Kalamata olives
1/3 cup chopped drained oil-packed sun-dried tomatoes
1/4 cup chopped fresh parsley
1/4 cup diced red onion

What to do:
Prepare the pasta as directed on the packaging. Once cooked drain and rinse in cold water. Rinse again and set aside to cool.

Mix all of the other ingredients together and add the pasta. Stir well and store in the fridge for several hours before serving. Enjoy!!
